How is freeze dried candy made?

Freeze drying is the act of freezing something down to incredibly low temperatures and then putting it under vacuum chamber. The low temperatures make it easier for the moisture in the food to be removed and thus, drying the food. The candy is then packaged and is shelf stable (as long as it is stored properly) for up to 25 years!


What freeze dried candy is best?

Although this is completely personal preference, I would be doing you a disservice if I didn’t suggest the Rainbow Poofs. These are freeze dried nerd clusters. They have a satisfying crunch that makes the swwet/tart flavor explode.
Can freeze dried fruit go bad?

As long as it is stored in a cool/dry place away from sunlight, it should be shelf stable for up to 25 years.


Will freeze dried candy melt?

The short answer is no (unless it has chocolate). The freeze drying process removes all the moisture from the food/candy making it shelf stable under any temperature.

Some people are starting to freeze dry chocolate candies and although they look delicious, the chocolate itself doesn’t freeze dry. So it will be good as long as it is eaten before the chocolate goes bad.
